This variety comes from a breeding project led by Adaptive Seeds focused on interesting new kale shapes, colors and flavors with winter hardiness. Adaptive Seeds invited Culinary Breeding Network and Portland chef Timothy Wastell to choose traits from a culinary perspective. The result is ‘Simone Broadleaf’ with strong agronomic traits, great flavor, unique shapes and qualities important to chefs like stems that can be easily stripped to leave perfect mini leaves.
